    Hi Healthy Hipster!
    I am a student at Ryerson University and I am doing some research on bloggers! I was wondering if I could ask you a few questions.     I love your ultimate cookie recipe. I have celiac disease so for the spelt floor portion I actually substitute 8….. 1/4 cup size assortments of any flour I can find that is GF…I use almond, fava bean, brown rice. etc…it does not matter….same portion as the spelt ,but any combination of assorted flours adding up to the 2 cups…as well I have added 1/4 cup of organic unsweetened cocoa powder…the cookies are amazing and I thank you so much !

    I am printing out lots of your other recipes to try…I am 63, vegetarian for 23 years and still climbing mountains and lifting my grandchildren with lots of help from good food…
