When I was a kid I hated breakfast food. Eggs, bacon, cereal, toast, pancakes, the whole lot. So when I got hungry in the mornings my grandma came up with the brilliant idea to make me Campbell’s chicken soup. Strange as it sounds, it went over like gangbusters with this lil’ hipster-in-training and I ate that stuff most mornings all the way into high school.
Now I have since grown to appreciate the breakfast in all its forms. Perfectly poached eggs, fruit smoothies, breakfast burritos & tofu scrambles…blow my freakin mind. HOWEVER…there is one breakfast food that for me dominates the competition. Maybe because it gives me the same comfort-food feeling of “soup for breakfast,” but nothing tastes better in the a.m. than a warm bowl of perfectly cooked OATMEAL.
If you just got seriously underwhelmed by that reveal, I empathize. But I also scoff and give you a patronizing ‘aww’. Because you clearly don’t know what you’re missing. Here’s today’s incarnation in all its glory:
In the mix:
- 1/3 cup oats cooked in 1 cup vanilla almond milk
- 2 egg whites
- freshly grated ginger
- Mix in 1/2 sliced banana
- Top with toasted almonds, pepitas, soynuts and coconut
- Sweeten to taste
Oh yeah…and serve that up in half a small cantaloupe. Cause you’re fancy like that. TASTYBEYOND.

This is so pretty!! I always thought that oatmeal couldn´t look good in any picture…now you have proved me wrong 🙂 And it seems like a very tasty oatmeal combination too 🙂
To be fair most of the time my oatmeal looks pretty dreary, but its always nice to put in that extra effort!
